Can we use a really cool quote as an introductory note to our chapters or our book as long as we attribute it? I have a couple of great ones and would love to use those. Of course, I wouldn't use too many because that would make the word count go haywire, but just the couple I have that I think are good (which at the moment is really just two).

You may want to check out this article on using quotes in your book (which has a good discussion about copyright law, fair-use and how best to handle this). From a NaNo perspective, I believe everything you write in November for your novel is fair game for your word count as long as you can feel good about the finished product at the end of November (I sometimes make up quotes from fictional characters to include at the front of chapters).
